In 2005 Penelope founded her own custom order Cake Company in Sloane Square’s Ormonde Gate. Customers began to learn of Penelope strictly by word of mouth. Within twelve months, customers included Harrods, Errol Douglas, Carol Joy, London Zoo and St Paul’s Cathedral. Penelope was a contributor to several magazines including, Condé Nast BRIDES, You & Your Wedding and Perfect Wedding.
By 2009 Penelope was receiving frequent requests to teach small groups and individuals privately at home and onsite in Restaurants, Kitchens and Bakeries. Cakes 4 Fun in Putney, London approached Penelope to reinvent and update all the Courses offered. In her three years at Cakes 4 Fun over six thousand students had completed Courses that she had aid design. Penelope introduced the PME Diploma program which was subsequently awarded a 5-Star rating from PME Knightsbridge.
In 2012 Penelope Managed the Peggy Porschen Academy in Belgravia, London. Focusing on students from overseas, Penelope built the Peggy Porschen Academy into the most profitable Internationally focused Cake Decorating School. Penelope also focused on the design, production and sale of Sugarcraft tools promoted in books written by Peggy.
Penelope has demonstrated a variety of techniques at various Cake Shows in the UK, Europe, UAE and Asia including; Cake International - NEC, TASTE of Christmas, Cake & Bake - London, Cake World Messe – Germany. She was also invited to be an honorary member of the advisory board for the International Bakery Expo, Hong Kong.
Penelope now specializes in sharing her experience through a variety of different services including: Commercial bakery training, recipe and product development, events, classes, private tuition and editorials.
Countries Penelope has worked in include: UK, Italy, France, Germany, Malta, Hong Kong, Australia, Malaysia, Vietnam, Abu Dhabi and Dubai.
Penelope has also advised on the creative direction, content and presentation of many publications in the Sugarcraft field in the last six years. Including a regular featured Baking Column in The Edible Artists Network Magazine, USA. She has been interviewed by both the BBC and CNN for Cake Decoration programs. Penelope is also a certified Wilton Instructor and brand promoter.

Where the Passion Comes From
When I started in Sugarcraft cake shops were a little bit dusty, cake books were stuck in the Victorian Era and edible glitter had yet to make its appearance in every corner bakery. I have been a part of, and witness to, the most rapid change in Cake Baking and Decorating in the last several decades.
Synthesising new trends and techniques into commercially viable products is what motivates me. Whether it is through demonstrations at Cake Shows or advising small groups of highly motivated artisans the challenge is always different. Respecting existing traditions, my role is to help my clients adapt and seize opportunities in the new International environment. Baking will always be local, the techniques required are international.
