At the end of last year, as part of a multi day class I was teaching, I was asked to include a section on Fresh Flowers on cakes. For this I worked with my very talented and old friend Patty Kubicka, whom is the most amazing florist and she subsequently taught this workshop. Patty came laden with masses of the most beautiful flowers; full bloomed roses, orchids, chrysanthemums and she also included the unexpected little treats of crab apples and edible peppers too!
Armed with comprehensive fact sheets and bundles of enthusiasm, students were first taught how to make edible crystallized petals (a Victorian speciality and very fashionable at the moment). Everyone then moved onto styling their own masterpieces and with flowers galore there was no shortage of inspiration. The most challenging part was trying to resist using all the flowers!
Everyone finished by decorating their own stacked cake. And to celebrate the amazing cakes created we all sat down to a delicious three course lunch and some fizzy pop!
A massive thanks to Patty for teaching this sensational class! Complete Deelite, Hong Kong for the wonderful students and Belair House, Dulwich for a beautiful venue. Looking forwards to the next one!
